
A novelty in summer 2009: in the Tyrolian Paznaun Valley (Austria) one can enjoy Michelin starred cuisine midst the high mountains. Under the patronage of Eckart Witzigmann four internationally -renowned, Michelin-star-awarded chefs cater for culinary highlights and enjoyment based on regional produce and dishes which are available in various mountain huts run by the Alpine Club.
In the Tyrolian Paznaun Valley is presented in summer 2009 a unique culinary treat, which combines sustainable tourism, prize-winning, international cuisine, regional produce and authentic mountain experience. Under the label ‘Culinary Way of Saint James’ each of four international-starred chefs, supervised by Eckart Witzigmann, create a menu, based on regional produce and dishes, each in one Paznaun Valley Alpine hut.
The culinary summer was launched on Sunday, July 5 2009. The culinary local hero Martin Sieberer (Paznauner Stube, Ischgl, Austria), the south Tyrolian star chef Norbert Niederkofler (Rosa Alpina, San Cassiano, Italy), the young and upcoming chef Norbert Fauster (Hotel Restaurant Königshof, München, Germany) and the Swiss chef Martin Dalsass (Ristorante Santabbondio, Sorengo) all present their creations after a convivial walk to each of their ‘their’ huts. The huts involved in this culinary event are: the Jamtal Hut near the village of Galtür, the Heidelberg Hut near Ischgl, the Niederelb Hut near Kappl and the Ascher Hut near the village of See.
The chefs are working at the stove and treat the mountaineers to modern interpretations of regional specialities. The guests can talk to the chefs and learn about the produce and the dishes. For the whole mountain summer the dishes will be on the menu. These special culinary mountain walks follow a tradition whereby walkers have their walking log books individually stamped by the huts and especially , on this occasion, also receive the printed chefs’ recipes and this is combined with the tastings of regional products . For the whole of the summer the Culinary Way of Saint James is offered in the Paznaun Valley.
